Yeah it’s true. I’m spouting the uber optimistic cliche today. But whatever. Today I was sent home early from work. I’m not sick and I didnt lose my job (that I know of) but because it’s a holiday week, attendance is down and we had a surplus of teachers in my room. So I was asked to go home. Now normally, PammyPam, Miss Ham, Miss Sam or whatever you wanna call me, doesn’t like to get sent home early. Unless I’m sick, of course. You see, PammyPam likes to get her hustle on. She likes to get PAID. To get paid one generally has to put in a full day. of work. at your job.
So. i got sent home at 9:45am. I got there before 8:30 am. riiiiiiiight. Normally my mantra is: if i shows up to work, i need to be there at least TWO hours before I get sent home. For my effort and all. I’ve taught my children this mantra too so that they dont volunteer to leave work too early.
But. this time i made an executive decision and decided to agree to the decision to send me home early. did i really have a choice? i’d like to think that PammyPam always has choices. that’s how it works on my planet. Since Pumkin is out for Thanksgiving break i thought it would be fun to spend the day with her. oh and clean. and get on the computer. and go Christmas shopping. and do 4 loads of laundry. and cook. and send some postcards and that’s what i did!
and. speaking of dinner. i found this recipe on Pinterest a while ago and have been wanting to make it. The linky will take you to a blog called For Mamas and this recipe is IT!!!!! It’s called Pizza casserole. Sure sure we are sick to death of casseroles, but since i can’t get enough pizza AND i likes to have the leftovers for lunch (and dinner. and sometimes brekkies. dont judge me) this seemed like the perfect recipe. I love saying the word recipe! it just flows off of the tongue. Number one son, however, hates the word. so i use it as much as i can around him.
ok so…recipe, right?
NOTE TO SELF: DO NOT HIT PUBLISH WHEN YOU MEAN TO HIT SAVE!!!!!
Here’s my tut for the Pizza Casserole of Heaven
1 bag of Large egg noodles
1 jar Tomato Sauce (whatever is in the cabinet)
shredded cheese (i used mozzarella)
pepperoni (suppose you could substitute turkey pep but why?)
ground meat (i used ground chuck)
SALT and PEPPER to taste (this was not in the original recipe)
brown the ground beef; season to taste and at the same time start the water for the noodles
cook the noodles. (is that a no brainer?)
preheat oven to 350.
they should both finish at the same time cuz you’ll need them at the same time.
get a casserole dish of your fave size (i used my smaller one, 9×12 or something)
then a layer of meat
then a layer of noodles
then a layer of sauce
then meat
then noodles
then cheese
repeat layers until cheese is your top layer (this is where i goofed) a complete layer of cheese is necessary.
on the very top of the cheese, place the pepperoni
cover with foil and bake for 30 minutes.
i put a cookie sheet under my dish in case it overflowed (it did not)
remove foil and cook for 15 minutes
remove from oven and let sit for 10 minutes to set.
and this is why your top layer needs to be cheese. my top layer was noodles and they got kinda crusty. but the crusty bits of noodles mixed with the crusty bits of peperoni and were kinda fabulous!
mine needed salt and pepper, which i added at the table but i think might have been tastier while cooking..?
Even little Miss” I’m not gonna eat that” ate some and liked it!
